What I Cooked This Week
This week included minimal cooking as I was out of town for work from Wednesday onward.
However, the two meals I did make have reinforced my love of the Modern Proper cookbook.
Here’s why: the times given at the top right corner of each recipe are accurate and many of the recipes can be made in 45 minutes max. They’re also easy to follow and delicious. Buy the book.
Monday - Chicken broccoli stir fry
This took 15 minutes to make. I omitted the basil and the nuts - the dish doesn’t need them. Start your rice first because it takes longer to cook than the whole dish. I did also overcook the broccoli.
Tuesday - Weeknight sort-of cassoulet
I love beans and you have to be a bean lover to like this dish.
I also omitted the basil here and used dried thyme instead of fresh. Worked just fine!
In full transparency, these dishes were great but aren’t the cutest…
